Dinner required very little work last night. I had done most of the prep work on Sunday afternoon. All I needed to do on Monday was turn on the crock pot before work and I was set. We had BBQ pulled pork with a lightened up version of potato salad. For the pork, I plopped in in the crock pot with some onion and a little bit of chicken broth to maintain some moisture. I turned it on low before work. When I got home, I dumped out the liquid. Some of the onion got dumped as well but that is fine. I then shredded the pork in the crock pot and added the BBQ sauce. I actually made the BBQ sauce this time because we didn’t have any in the fridge but I did have all the ingredients necessary for this recipe. I found the sauce recipe on Simply Scratch. You can find the original recipe here. It is very easy and it is likely that you already have most of the ingredients.
- 1 1/2 cups Dark Brown Sugar, packed
- 1 1/4 cups Ketchup
- 1/2 cup Red Wine Vinegar
- 1/2 cup Water
- 1 tablespoon Worcestershire Sauce
- 2 1/2 teaspoons Ground Mustard (I didn’t have any so I skipped this)
- 2 teaspoons Paprika
- 1 1/2 teaspoons Kosher Salt
- 1 teaspoon Black Pepper
Add all ingredients in a large bowl. Stir to combine until the brown sugar is dissolved. I am used to a slightly thicker BBQ sauce but for pulled pork it worked out perfectly. This recipe makes about 4 cups of BBQ sauce. Use immediately or cover and put in fridge.
As a side we had potato salad. Potato salad can be a less than healthy part of the meal. In order to cut down on calories I added in some extra veggies and used a light version of mayonnaise.
- 4 medium potatoes, about 1 1/2 pounds, cut into one inch cubes with the skin on
- 1 sweet green pepper, chopped
- 1/4 cup onion, diced
- 1 celery stalk, sliced thin
- 1 1/2 teaspoons salt
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon mustard
- 2 tablespoons cider vinegar
- 1 hard boiled egg, chopped
- 2/3 cup light mayonnaise
- Boil potato cubes for 20 minutes, or until tender.
- While potatoes are boiling, combine onion, peppers, celery, salt, pepper, mustard, vinegar and mayonnaise in a large bowl.
- After potatoes have cooked, drain and immediately add them to the mayo and veggie combo. Adding the potatoes while still hot will help them soak up the flavor. Stir in egg.
- Cover and refrigerate for at least 6 hours.
Dinner was great. It was my first time hard boiling an egg, making bbq sauce, and making potato salad. Everything came out pretty well. The potato salad was lacking something. I don’t have the original recipe up front of me so I don’t know if I missed a spice or something. This recipe will need some tweaking, for me, but it is a good starting point.
After dinner and a trip to the dentist, I headed to the gym at my husbands office. I learned last night that I still hate the treadmill. It is the most boring thing in the world to me. I had the place to myself so I was able to point a super high power fan right on me and turn on the Biggest Loser. I was hoping the tv would distract me but I still found myself glancing at the numbers on the treadmill every other second.
When I first started running I did it 100 percent on the treadmill. I love the gym so it was a way for me to try something new in a place that I felt comfortable. By February of last year I finally transitioned to road running because I knew my first half marathon was coming up. It took me a while to learn what my pace felt like outside. I would start out way to fast and burn out. Now I have a better feel for what my paces feel like and knowing what type of an effort I am going for. I also love being outdoors so outdoor running as been perfect for me. Since last February I have gone exactly 1 mile on the treadmill. I tried treadmill running one super hot night over the summer and only lasted 1 mile. I hated every second of it. Now that I am used to road running, the thought of running inside sounds terrible.
Last night I made it 4.1 miles on the treadmill before giving up. That put my daily total around 5.25ish. Not the 10 that I had the schedule but better than the 1 I felt like doing. The treadmill isn’t all bad and I am sure I could get used to it again if it was necessary. I want to like the treadmill. The idea of running while watching tv sounds fantastic. I love running and I love watching tv. What could be better?
This was our lovely weather this morning. Needless to say I did not even attempt to run in that. -25… no thanks. That was up from -26 when I first got up at 6am. As I have said many times before, I am not from the Midwest. I am from Southern California. I spent 16 or 17 of my 28 years of life there. I checked their weather and there are 80 degree days in the near future. This whole – 25 wind chill business is sort of new to me. Still, I am hoping to get outside to run either tonight or tomorrow morning. The wind is supposed to die down and the temps (without the windchill added in) should be above 0. That I can handle… somehow…
While we are talking weather, since I am apparently obsessed, I checked out the forecast for the different places we are going on our cruise. We are a little far out for the 10 day forecast but I think it is safe to say we will be much much warmer on our trip. The lows are in the 70′s and the highs are in the 80′s. I could die of happiness.

Mine is sunny and 70-75. That is absolute perfection. Ooo, add in a slight breeze…. on the beach…. with Starbucks in my hand… sigh
